Recipe for organic carrot soup, almond milk syphon

This recipe offers a simple and comforting velouté made from organic carrots and potatoes, with an original touch of almond milk. Perfect for a light starter or a main course as a side dish.

· Organic carrots 1kg

· 300g potatoes

· Water 1l

· 500ml cream

· White onions - 1 piece

· Almond milk 10cl

· 30% cream 10cl

· Salt and pepper

  • Steps to make the recipe:

  • Prepare the vegetables : Peel potatoes and carrots, then cut them into slices.
  • Saute the onion : Slice the onion and brown it in butter until golden brown.
  • Add vegetables and water : Add the carrots and potatoes to the pot, then add 1 liter of water. Bring to a boil.
  • Let it simmer : Cover and cook for 45 minutes on low heat.
  • Add the cream : Once the vegetables are tender, pour 500 ml of cream into the mixture. Cook for an additional 15 minutes.
  • Season : Taste and adjust salt and pepper to taste.
  • Mix : Use a blender to obtain a creamy velouté.
  • Prepare the topping : Heat almond milk with 10 cl of 30% cream. Add salt and pepper to taste.
  • Pour into a siphon : Add this preparation to a siphon for an airy and frothy texture.
  • Serve : Enjoy your hot soup, ideal for cool days.
