At Ingalls, located at 29 rue Vaugelas in Annecy, our bar menu features eight signature cocktails crafted by our bartenders, priced from €12 to €15, plus two non-alcoholic versions. They are served on our shaded terrace, tucked away in a private courtyard, every day with continuous service from 12 p.m. to 10 p.m.

Fruity and fresh

  • The Sartoria (€14) combines Gin Mare with Sarti liqueur, strawberry and mango purées, lime juice, prosecco, and a splash of sparkling water. It is the lightest drink on the menu.
  • TheAbricée (€12) starts with Tanqueray gin and Boudier apricot liqueur, brightened with lemon, fresh mint leaves, and topped with tonic.
  • TheAzalée (€12) features Havana Club rum, a concentrated hibiscus infusion, violet liqueur, and lime. It is our most floral and colorful cocktail.

Indulgent

  • The Pistachérie (€13) blends pistachio-infused vodka with Cherry Heering liqueur, amaretto, and lemon. A dessert cocktail, perfect for the end of a meal.
  • The Thym des Pêches (€12) features June Peach gin infused with thyme, lemon, sugar syrup, a dash of Angostura, and a light foam topping.

Full-bodied

  • TheAventus Absolu (€15) is the most complex on the menu: Plantation Pineapple rum, falernum liqueur, crème de cassis, Boudier bergamot liqueur, grapefruit bitters, lemon, and grapefruit juice. Finished with a drop of peated Monkey Shoulder whisky.
  • TheEspresso Bongo (€15) combines Appleton Estate Signature Blend rum and Black Spirit coffee liqueur with lime, orange, pineapple, and passion fruit purée.
  • TheOgoh Ogoh Mule (€12) is a twist on the mule featuring kaffir lime-infused vodka, vanilla syrup, calamansi juice, and ginger beer.

Alongside these eight signature drinks, our classics remain on the menu: Pornstar Martini, Espresso Martini #2, Caipirinha, and Negroni (Rosso or Bianco), ranging from €11 to €12. Everything is detailed on the bar menu.

How do our bartenders create their cocktails?

There is a difference between mixing bottles and crafting a cocktail. For our signature menu, most of the work happens before you even order.

Take the Pistachérie. Its vodka is prepared by fat wash : we infuse the alcohol with a fat—in this case, pistachio—let the mixture set in the cold, then filter out the solidified fat. What remains is the aroma, without the texture. It takes several days.

The same logic applies elsewhere. The gin in the Thym des Pêches is infused with thyme. The Azalée requires a concentrated hibiscus infusion, paired with a hibiscus syrup for a lingering finish. The vodka in the Ogoh Ogoh Mule is macerated with kaffir lime, a highly fragrant Asian citrus, which is then combined with calamansi.

And then there are the details you don't notice. The Aventus Absolu already has seven ingredients. Our bartenders add a single drop of peated whisky. One drop, in an entire glass, for a hint of smoke in the background. It’s the kind of decision that is made by tasting, not on paper.

Beyond the eight signature creations, our team has an ace up its sleeve: the bartender's hidden gem. An ephemeral recipe that changes based on inspiration and doesn't appear on any printed menu. You have to ask at the bar to find out what it is that day.

Where to enjoy an aperitif on a terrace in Annecy?

Our terrace is set in a private courtyard, tucked away from Rue Vaugelas. It’s shaded and quiet, away from the foot traffic and street noise. The contrast between the sidewalk and the courtyard is striking.

Two things set it apart from other bars in the neighborhood.

You can both drink and eat here. Whether it’s just a cocktail, a board to share, or a full meal, the kitchen runs alongside the bar. No need to choose between the two or change venues in the middle of the evening. Our menu is served during the same hours.

Come whenever you like. We offer continuous service from 12:00 PM to 10:00 PM, every day. A drink at 4:00 PM on a Tuesday, after-work drinks at 6:30 PM, or a final cocktail after dinner: standard time slots don't apply here. In Annecy, that’s rarer than you might think.

What about those who don't drink alcohol?

Two non-alcoholic creations are on the menu. TheIslander (€8) combines passion fruit purée, pineapple juice, and amarena cherry syrup. The Choco Mango (€9) features mango juice, lime, white chocolate syrup, and tonic.

Two options, not ten—but two genuine recipes, prepared just like the others, rather than just fruit juice served in a fancy glass. We also offer a selection of soft drinks, lemonades, and ginger beer.
